A few weeks ago, Lubbock Impact received one of the most unique and generous gifts we’ve ever been given: a whole cow! Our executive director, Becky Robertson, got a call from a donor asking if we would take one. A little caught off guard, her first response was, “Is it alive?” to which Mr. Robinson laughed and assured her it wasn’t. Instead, he invited her to meet him at Red Raider Meats to pick up the processed beef.
When Becky arrived, Mr. Robinson and his young son shared the story behind their donation. They had recently started a cattle business, and this cow was the very first fruit of their new herd. They explained that they wanted to honor the Lord for blessing their family and felt that providing for Lubbock Impact’s Community Meal and food pantry was a meaningful way to give back.
What a beautiful picture of generosity and gratitude! Their gift has already been put to use in the kitchen. Our Community Meal team has served the beef at Taco Tuesday and as tender beef tips on another night: meals that not only filled plates but also created space for fellowship and joy around the table.
Moments like these remind us of what a privilege it is to be part of God’s work in Lubbock. Each gift, whether it’s the first cow from a new herd, a bag of groceries, or a few hours of your time, helps us extend hope and love to our neighbors. We are truly grateful for donors who see the ministry happening here and choose to come alongside us.
